Segment LCD display: LCD that displays fixed content such as numbers, symbols, units, etc. through pre designed "segments". Each 'segment' is an independent electrode. It can only be used for simple display of numbers and characters.
Graphic LCD display: A matrix composed of a large number of independent pixels (Dots) that can display any text, graphics, or image. Pixels are usually controlled in a row column driving manner. For example, a 128x64 dot matrix LCD screen has 64 dots vertically and 128 dots horizontally, for a total of 128x64 dots. As shown in the figure below.
